Miso-Glazed Tofu with Peanut Sauce

½ c. red miso
¼ c. sugar
2 T. soy sauce
2 T. mirin
5 T. rice vinegar
½ tsp. cayenne
¼ c. vegetable oil

2 large packages firm tofu

Preheat broiler.  Drain and rinse tofu, press to remove excess moisture.

In food processor, mix all ingredients except the oil until smooth.  Pour in the oil and process until a glossy  glaze forms.  Slice tofu into ½” x 2” x 1” pieces.  Gently dip each piece of tofu into the miso glaze to thoroughly coat.  Arrange on foil lined rimmed cookie sheet.  Broil for 3 – 5 minutes,  until golden and caramelized, then remove from oven and turn the pieces over.  Baste the tofu once more with the remaining miso glaze.  Broil 3 to 5 minutes more until the tofu is golden and the edges are crisp.  Serve on thin slices of fresh pineapple with peanut sauce.

Peanut Sauce
1 c. coconut milk
1/2 cup crunchy peanut butter
1/2 small onion, grated
1 tablespoon dark soy sauce
2 teaspoons brown sugar
1/2 teaspoon red pepper flakes

Mix all ingredients in a medium saucepan.  Heat to boiling.
